Salad of grilled pork, avocado and parsley

Yeah, you got it! Different surroundings, different croquery… I’m not at home. Exactly! I was on holiday in Italy and was able to use other things, different products. Those fabulous sweet white onions, for instance. Don’t find them here… Or this particular cut of pork… I could have it over here, but I’d have to ask my butcher to cut it for me, I wouldn’t find it otherwise… But back to the recipe 😉

Ingredients:

  • grilled pork
  • avocado
  • sweet onion
  • flat leave parsley
  • grana padano
  • lemon juice
  • olive oil
  • salt&pepper

Method:

  1. grill the meat   and leave to cool (or, for a warm salad, proceed immediately) cut away the skin and slice;
  2. slice the avocado and sprinkle with lemon juice;
  3. separate also the leaves of parsley;
  4. slice the onion fairly thin and combine everything in a bowl, adding some grana padano shavings as well;
  5. season with salt&pepper and mix gently with some olive oil and lemon juice and serve.
