Blueberry cheesecake strudel

Home alone with firstborn. Firstborn bored. Don’t know what to do. Don’t wanna do this. Don’t wanna do that. It sounded almost as if firstborn wantet to stay bored. This is an attempt to action. A little cheesecake strudel I called it. Monoportion. Just blueberries mixed with cream cheese, vanilla paste, some sugar and some breadcrumbs (for the cheesecake feel). All wrapped into a buttered fillo pastry sheet…

Ingredients:

  • blueberries
  • cream cheese
  • sugar
  • vanilla paste
  • bread crumbs
  • fillo pastry
  • butter

Method:

  1. in a bowl mix the cream cheese with the vanilla paste, the sugar and the bread crumbs;
  2. fold in the blueberries very gently, so that they won’t burst;
  3. put a spoonful of the mixture on a buttered fillo pastry sheet and close it, brushing some more butter to close it well, sprinkle some more sugar on top of it;
  4. bake at 200 °C for 7-15 minutes (depending on the size of your strudel) and leave to cool and enjoy.
