Home made sausages

It’s what can you do when you had a barbecue and have some leftovers that you don’t want to see in their original cooked form. Well. You get some caul fat from your butcher and some extra mini sausages (or ground pork, if you want them leaner) and chuck the grilled veggies in along with the meat. Form a new sausage and there you have it. A nice little nibble that’s a complete barbecue in two bites 😉


  • ground pork (or mini sausages)
  • grilled vegetables (onions, peppers, mushrooms)
  • caul fat
  • garlic
  • rosemary
  • lemon zest
  • salt&pepper


  1. take out the sausages out of their casings and put them in a bowl;
  2. blend the grilled vegetables, but not too long, you don’t want to end up with a grilled veggies paste;
  3. mix them with the meat, add chopped fresh garlic, rosemary and some lemon zest;
  4. season;
  5. put down the caul fat on a cutting board, form the sausages with your hand and wrap them with the caul fat;
  6. cook on a low heat in a pan with some olive oil.
