Long story short. I was going to have a tex-mex dinner and at the last moment… Change of plan. What to do with the ground beef that I took out of the freezer that very morning? So I decided to prepare a meatloaf, a very simple one in fact. Just Onions, grated breadcrumbs and cheese, an egg and seasoning. Than I baked it in the oven, and this is what came out with the last of the leftovers 😉
- ground beef
- grated cheese
- feta cheese
- put the meat, egg, breadcrumbs, grated cheese and salt&pepper in the blender and mix them all well together;
- put in a cake tin and bake in the oven until cooked, take out and leave to cool completely (it’s even better if you do it the day before);
- cut the meat into cubes and serve on bamboo skewers with olives and feta cheese.
