Strawberry piñata cupcakes

I’ve seen this recipe on @MyCupcakeAddictionAu’s channel on Youtube (https://www.youtube.com/watch?v=8f6Z7uojuk0) and thought it as lovely. I just changed the recipe of the cupcake using fresh strawberries in the batter instead of milk and adding a little bit of food coloring. They were really lovely!!

Ingredients:

  • 190g sugar
  • 250g flour
  • 2 eggs
  • 125g strawberries
  • baking powder
  • salt
  • 50 butter
  • icing sugar
  • milk
  • butter
  • vanilla paste
  • sprinkles
  • m&ms
  • minismarties

Method:

  1. prepare the batter as usual, but instead of using milk use the mixed strawberries (minus the seeds) and cook the cupcakes at 180 °C for 15-20 minutes and leave them to cool;
  2. prepare the buttercream and put it in a piping bag with a star-tip;
  3. once the cupcakes are cold make a hole on the top (keep the “lid”) and pour some minismarties inside, put the lid bak on top, pipe on some of the buttercream;
  4. decorate with sprinkles and with a m&m on top and serve.
