Potato cream soup with truffle paste

The calendary says so, but out of the window you still are not sure… is fall coming? Is it? Well, to open up the soup season here a quick potato cream soup, jazzed up with some truffle paste. Much loved around here, as much as “mom, what do we have for lunch?” “potato cream soup” “ahhh *eyes rolling*”, “but with truffle paste!” “oooOOOoohhh! *eyes alighting*”

Ingredients:

  • starchy potatoes
  • vegetable stock
  • onion
  • garlic
  • olive oil
  • butter
  • salt&pepper
  • cream
  • truffle paste

Method:

  1. chop the onion and the garlic, put them in a pot with some butter and olive oil;
  2. peel and dice the potatoes, once the onion has softened add the potatoes, toss them briefly around and add the stock;
  3. cook until tender, season and blizz;
  4. add some cream and serve with a teaspoon of truffle paste per person.
