Headcheese with brussel sprouts coleslaw

I hate brussel sprouts. Well. Maybe I don’t hate them, but they sure don’t make top 10 on my favourite foods’s list. Then again, maybe thanks to this recipe they will. Because I used them raw they didn’t have the usual flavour, it was actually very interesting to eat.


  • brussel sprouts
  • apples
  • chillies
  • red onion
  • coriander
  • lime zest and juice
  • olive oil
  • salt&pepper
  • mayonnaise
  • crème fraîche
  • headcheese


  1. shred the apples and the cleaned brussel sprouts very finely, add the chillies and the coriander and the finely sliced red onion;
  2. add the lime juice and zest and some olive oil;
  3. season with salt&pepper;
  4. add equal amounts of mayonnaise and crème fraîche and reseason if necessary;
  5. leave in the fridge to marinate and serve on a spoon with some cubed headcheese.
