For this one I will have to thank Elise from the Youtube channel MyCupcakeAddiction (again) for the most simple of recipes for preparing ganache. And it works everytime. And I’m so glad that she gives the recipes in grams and not in cups (lazy me, I know). But I’m wandering off…. So, here yummy little vanilla cupcakes with a blueberry jam filling (homemade jam, of course, but also of course, not my home ;-p ) wiht a voluptuous white chocolate ganache and some coconut shavings.
- 190g sugar
- 250g flour
- 2 eggs
- 150ml milk
- 1/2 packet baking powder
- 50g butter
- 600g white chocolate
- 183g cream
- blueberry jam
- first of all prepare the ganache, because it’ll have to cool down and I’ve followed the recipe of MyCupcakeAddiction and prepared it in the microwave oven: put the cream and the chocolate in a microwave proofed container and cook it in 1 minute bursts stirring for 30 seconds in between, mine were done after 3 minutes and something, put some clean film on top and let it cool down;
- prepare the cupcakes as usual, by mixing the dry and the liquid ingredients separately, combining them and pouring the batter in to a lined tin and baking them for 15-20 minutes at 180 °C, take them out and leave to cool completely;
- with a cookie (or pasta) cutter, cut a round in the middle of the cupcake and keep the “lid”, pour in a little bit of blueberry jam;
- decorate with a swirl of white chocolate ganache and add some coconut shavings on top.
