I know I’ve said this a couple of times already. Even though I eat meat, there’s nothing wrong with turning to other options every now and then. This is one of these options. Use quinoa to make small sliders to eat just like this or by dipping it in some fresh guacamole? Why not?
- spring onion
- frying oil
- cook the quinoa according to the instructions on the packet (boil it in double the amount of water for 10 minues and let sit for another 5);
- put it in a bowl along with the chopped coriander, chillies and spring onion;
- add the grated cheddar and the egg, season;
- form small sliders and shallow fry them in a pan, take out and leave for a moment to drain on a piece of kitchen paper, serve immediately.
