Shiitake omelettes

Shiitake omelettes

Had a craving for shiitake mushrooms, but I didn’t have the fresh ones, so I ended up preparing omelette squares with dried shiitake. It was delicious. And simple. And quick. And vegetarian, for once 😉 To speed up the process of rehydrating the mushrooms just put them in a microwavable container with some water and give it a few blasts. That should do it.

Ingredients:

  • shiitake
  • eggs
  • soy sauce
  • fish sauce
  • sesame oil
  • sesame seeds
  • sriracha
  • rice vinegar
  • sugar
  • salt&pepper

Method:

  1. rehydrate the mushrooms in the microwave, a couple of 30 seconds blasts should be enough, and chop them;
  2. in a bowl crack a couple of eggs and mix well, season, add some soy sauce, sugar, and sesame oil, add the mushrooms;
  3. cook them in a pan oiled with sesame oil and take out on a piece of kitchen paper to dry;
  4. toast the sesame seeds and add them to the sauce prepared with soy and fish sauce, rice vinegar, sugar, sesame oil and a little bit of sriracha.
