Blueberry cookies

Ok. Ok. I’ll admit. I had help on this one. The task was too difficult to accomplish by myself and so I enlisted the help of my pack of 3 wolves ;-). They were more than eager to chop almonds (with the BIG knife, hell yeah!). But most of all, they were eager to taste EVERYTHING. I was happy they didn’t go for the baking powder first… so I could get it out of the way.


  • 2 cups of flour
  • 1/2 cup of almonds
  • 1/2 cup of butter
  • 1/2 teaspoon of salt
  • 1/3 cup of milk
  • 1 egg yolk
  • 1 teaspoon of vanilla extract
  • zest of 1 lemon
  • 1 cup sugar
  • 1 cup fresh blueberries
  • 2 teaspoons baking powder


  1. have 😉 the almonds chopped and toasted and set them aside;
  2. mix flour, baking powder and salt in a bowl;
  3. cream the butter with the sugar, add the egg yolk, the vanilla extract, the lemon zest and the milk and then add the dry ingredients;
  4. fold in the toasted almonds and the blueberries (tossed in flour);
  5. leave in the fridge for at least 1 hour;
  6. form balls the size of a ping pong ball and bake in the preheated oven for 15 minutes at 190°C, leave to cool on a rack and serve.
