Cashew nuts brownies with white chocolate strawberries

This looks like a Valentine’s Day treat, right? It was, very dark and rich and chocolaty, the richness cut through only slightly by the strawberries. Ah, no need to wait a whole year for the next Valentine to try these 😉


  • 140g dark chocolate
  • 300g dark chocolate
  • 125g milk chocolate
  • 130 cashew nuts
  • 125g butter
  • 3 eggs
  • 150g flour
  • 70g cocoa
  • 1,5dl cream
  • 150g cream
  • white chocolate
  • strawberries


  1. prepare the chocolate ganache by mixing 300g of dark chocolate and 150g of cream in a bowl and givin it 1 minute blasts in the microwave and mixing for 30 secs in between, once done cover and leave to cool;
  2. prepare the brownie mix by melting butter and dark chocolate together, leave aside;
  3. chop the milk chocolate and the nuts;
  4. mix the eggs and the sugar, add the melted chocoalte and butter, the cream, the flour and the cocoa, fold in the milk chocolate and the chopped nuts;
  5. bake in a preheated oven at 200°C for about 20 minutes, taste with a skewer.
  6. spread the ganache on top of the brownies and decorate with some strawberries with white chocolate.
