Lemon curd cupcakes

Perfect little sweet bites. That’s what these minicupcakes are. Not too sweet. That’s how I like my desserts. The tartness of the lemon curd helps to balance the sweetness of the cupcake. Give it a try, will ya?

Ingredients:

  • 190g sugar
  • 250g flour
  • pinch of salt
  • 50g butter
  • 2 eggs
  • 130ml buttermilk
  • zest and juice of a lemon
  • lemon curd
  • baking powder

Method:

  1. cream the butter with the sugar, add the eggs, the salt, flour, and baking powder, add the buttermilk and the zest and the juice of a lemon;
  2. bake for 15-20 minutes at 180°C and once cooked leave to cool completely;
  3. decorate with a swirl of lemon curd on top.
