Coconut and matcha cupcakes

It’s been a while since I’ve published my last cupcake recipe. But, seriously, who wants to bake when it’s smoldering hot outside? I have no AC in da house. So I had no intention whatsoever to fire up the oven just for sweets. Don’t forget, there are a lot (LOT) of yummy icecreams around. So it’s not like I went sugarfree for the summer. But back to business. Not your usual vanilla cupcake here, but I’d like to say, have a try because even if you’re unsure about coconut or matcha, or both, they really went well together.

Ingredients:

  • 200g flour
  • 50g butter
  • 2 eggs
  • 190g sugar
  • 160ml milk
  • 50g coconut
  • 40g matcha powder
  • pinch of salt
  • teaspoon of vanilla paste
  • baking powder
  • green candy melts
  • green sugar

Method:

  1. divide the ingredients and prepare the batter once with the coconut and once with the matcha powder;
  2. put a tablespoon of each in a cupcake form and swirl with a toothpick;
  3. bake for 20min (ca.) at 180°C;
  4. take out and let cool completely;
  5. melt the chocolate and once cooled a little bit, pour on top and decorate the top of the cupcake, adding a little bit of green sugar as well.
