And while outside it’s cold and grey, the happy Christmas baking is going on. Instead of preparing the classic version of “Mailänderli” this year I tried a new version, with chocolate and orange zest.

I had my go with a little part of the dough, and I left the rest to my pack of wolves, for their happy baking #itwassoooquietforawhile!

  • 250 g butter
  • 225 g sugar
  • 1 pinch of salt
  • 3 eggs
  • 1 orange, the zest
  • 500 g flour
  • 250g butter
  • 225g sugar
  • 1 pinch of salt
  • 3 eggs
  • 50g cocoa powder
  • 500g flour
  • milk

  1. beat the butter until soft, add the sugar and the salt and continue beating until creamy, add the eggs one at the time, then add the zest (OR the cocoa powder) and the flour;
  2. wrap in cleanfilm and put in the fridge to rest;
  3. roll part of both the doughs, form strips and place them next to one another, one black, one white, brush with a little bit of milk to ensure that they stick together, add a second layer using the second color first, make 3 layers;
  4. wrap again in clean film and put in the freezer for 5 minutes, cut in slices and put on a baking sheet;
  5. bake at 200°C for about 10 minutes, put on a rack to cool completely.
