Stracciatella cream puffs

Valentine’s Day is just around the corner, time to go in the kitchen and stir things up a bit with a delicious dessert.


  • 50g butter
  • 1 pich of salt
  • 2 dl water
  • 2 spoons sugar
  • 120g flour
  • 3 eggs
  • 1 l milk
  • 3 spoons potato starc
  • 2 eggs
  • 2 spoon sugar
  • 35g dark chocolate, shaved
  • hearts candy
  • white chocolate


  1. boil water, butter, sugar and salt in a pan, reduce the heat and add the flour all at once, mix well until combined and the dough doesn’t stick to the pot, put in a bowl and leave to cool;
  2. add the 3 beaten eggs, a little bit at the time and check for consistency (it shouldn’t be runny);
  3. put in a piping bag with a star tip and pipe the cream puffs (4cm diameter ca.), bake at 180°C for 35 minutes, don’t open the oven doors until cooked (EVER!), turn off the oven and leave to dry for another 15 minutes with the oven’s door slightly open;
  4. take out to cool completely, and cut in half;
  5. bring the milk to the boil and cook until it has reduced to 4dl, sieve it and leave to cool;
  6. put the reduced milk in a pot with the sugar and the potato starch, and bring it to the boil stirring continuosly, once thickened take it from the heat and keep stirring for another 2 minutes, sieve it again and leave to cool in the fridge for 2 hours;
  7. add the shaved chocolate to the cream and pipe it in the cream puffs;
  8. decorate with some melted white chocolate and the hearts candy.
