Peanut butter cupcakes with chocolate frosting

Peanut butter cupcakes with chocolate frosting

I think I said I was going to post less caloric recipes and I’m not. Believe me, I’m having nothing of what I posted since the beginning of january, but it’s been fun all the same. For this recipe I have to thank @MyCupcakeAddiction for the frosting it’s so easy it’s impossible to get wrong, and the smell…. jeez! And I’m not the biggest chocolate fan, but that smell…!

  • 190g sugar
  • 250g flour
  • 100g peanut butter (smooth)
  • salt
  • 2 eggs
  • baking powder
  • 150ml milk
  • 1 cup butter
  • 1 cup dark chocolate

  1. you’ll have to start with the frosting, because it’ll take THE MOST of your time, no I’m joking, it only needs to set. So, put butter and chocolate together in a microwave proof bowl, melt them and mix, once the consistency is similar to a liquidy ganache it’s ready for the fridge (2h, so time your cupcakes), and yes, cover it;
  2. prepare the cupcake batter as usual, using the peanut butter instead of the normal butter, bake the cupcakes at 180°C for 15-20 minutes, leave them to cool completely on a rack;
  3. once cooled, take out the melted butter and chocolate mix, that now will still be kind of giving in to the touch, take out the electric beater and beat it on high until it gets all creamy and pipe it on top of the cupcakes. Ta-dah
