Very proud of my offspring who brought 2 trophies back home. That had to be celebrated. The perfect occasion to try a new take on a cheesecake.

Strawberry cheesecake

Serves: 12 Cooking Time: 4 hours

Ingredients

  • cream >5dl
  • cream cheese 250g
  • strawberries
  • petit beurre bisquits 1 pack
  • sugar
  • salt
  • gelatine sheets (8, I wanted to be ABSOLUTELY sure)
  • butter, 1 stick

Instructions

crumble the bisquits in the blender, pulverise and add the melted butter;

put in a spring pan and flatten it out, put in the fridge to set;

wash and cut the strawberries into thin slices;

decorate all aroun the tin, just above the bisquit bottom;

soak the gelatine;

whip the cream to a soft peak, add the cream cheese, sugar, pinch of salt, vanilla essence and some blizzed up strawberries (the offcuts and the remnants), combine everything;

take out a spoon or two and heat gently, add the soaked sheets of gelatine and mix until the gelatine has dissolved, mix it back with the rest, pour the mixture into the tin and put in the fridge to set (at least 2-4 hours).
