Ingredients

  • 250g butter
  • 250g sugar
  • 4 eggs
  • zest of 2 lemons
  • 250g flour
  • 1TS baking powder
  • 1 pinch of salt
  • icing sugar
  • juice of the lemons
  • 400g white chocolate
  • 250ml cream

Instructions

cream the butter with the sugar;

add the eggs one at the time

add the flour, salt and baking powder and the zest of the lemons (keep them for later)

bake the cupcakes for 20 minutes at 180°C, let them cool on a rack

prepare the syrup mixing the lemon juice with icing sugar

poke the cupcakes and pour the syrup in

prepare the ganache by microwaving the chocolate and the cream for 1 minute and stir for 1 minute until it's all melted

whip the ganache and pipe it on the cupcakes.
