I did it again. I cheated and got a cake mix. I had little time to prepare this dessert though. And it turned out very nice.

Ingredients

  • brownie mix
  • eggs
  • butter
  • water
  • ricotta
  • cream cheese
  • cream
  • sugar
  • salt
  • vanilla paste
  • gelatine sheets
  • red currants

Instructions

prepare and bake the brownie according to the instructions;

mix the ricotta with the softened cream cheese and the cream (beaten to a soft peak);

add the sugar and the salt;

soak the gelatine in cold water for 5 minutes, wring out the water and dissolve it on a gentle heat with a spoon of the cream cheese mixture;

spread on top of the cooled brownie and put in the fridge to set;

clean and cook down the red currants, pass the coulis through a sieve;

mix in a couple of gelatine sheets;

leave to cool and spread on top of the brownie-cheese cake and put it back in the fridge to set.
