Plum pie

- pie dough
- plums
- lemon zest
- flour
- salt
- demerara sugar
- cardamom
- coriander
- cinnammon
- hazelnuts
- bitter almon extract
- cream
- egg
Instructions

pit and cut the plums into cubes;

toss them in a bowl with the spices, ground hazelnuts, the sugar, the flour, salt and the lemon zest;

put the dough in the baking pan, add the plums, cover with the rest of the dough, brush with the eggwash and bake in a ventilated oven at 189°C for 35 minutes;

once ready leave to cool on a rack, pour the cream and the almon extract in the whipped cream maker and serve the cake with a nice swirl of cream on top.
