Salsa borracha

I recently came to discover this sauce, and I love it! For now I’ve tried it with grilled meats and with potato chips and it’s lovely. Can’t wait to taste it with tortillas. For more spice leave the seeds of the jalapeño in.

  • 4 tomatoes
  • 2 cloves of garlic
  • 1 jalapeño
  • salt to taste
  • 60 ml of mexican beer (if you can find it)
  • fresh coriander



cook the vegetables in the oven at 200°C for 15-20 minutes (the garlic and the chilli will take less though, so take them out once cooked);


typically this sauce is made in a kind of mortar, you can use a blender;


season and add the beer, mix in the fresh chopped coriander and serve.
