The first hints of fall are here, it’s raining, it’s cold, the leaves are turning yellow, and every farm is selling pumpkins, time to bake some cupcakes!

Ingredients

  • 3 tbsp cinnammon
  • 2 tsp ginger
  • 2 tsp nutmeg
  • 1 ½ tsp allspice (piment)
  • 1 tsp cloves
  • hokkaido pumpkin
  • 180 g flour
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 ½ tbsp Pumpkin Spice blend
  • 115 g butter
  • 90 g sugar
  • ½ tsp vanillasugar
  • 2 eggs
  • 3-4 tsp pumpkin purée
  • 80 ml milk
  • 125 g butter
  • 2 tbsp pumpkin purée
  • 300 g icing sugar
  • 1 tsp Pumpkin Spice blend
  • sugar
  • pumpkin seeds

Instructions

prepare the blend of spices, you won't need all of it for this recipe but it'll keep for a while;

cook the pumpkin and blizz it very finely;

prepare the cupcakes and bake them at 175°C for 15-20 minutes;

prepare the frosting by mixing the butter and the pumpkin purée, and adding the icing sugar and the spice blend;

prepare a caramel, pour over a sheet of parchment paper and sprinkle with pumpkin seeds, break it and use the shards to decorate the cupcakes.
