Chocolate and dulce de leche brownies

Did I not say I wasn’t going to post any sweet recipes for a while? And where did I land? On something sweet. Again! To my own defence I can say that I had that jar of dulce de leche for quite some time sitting around in the cupboard, it was definitely time to take it out and do something nice with it.

  • 115g unsalted butter
  • 170g dark chocolate, chopped
  • 25g cocoa powder
  • 3 large eggs
  • 1 cup sugar
  • 1 tsp vanilla paste
  • 1 cup flour
  • 1 cup dulce de leche



line a 20 cm square pan with parchment paper that covers the bottom and reaches up the sides. Make sure it's all covered, 'cause this will be sticky;


melt the butter and the chocolate in the microwave and stir inbetween blasts;


whisk in the cocoa powder until smooth, add in the eggs one at a time, then stir in the sugar, vanilla, salt then the flour;


scrape half of the batter into the prepared pan, drop one-third of the dulce de leche, into dollops and space them evenly over the brownie batter;


then drag a knife through the dulce de leche mounds to swirl it slightly;


spread the remaining brownie batter, drop spoonfuls of the remaining dulce de leche using a knife to swirl it again;


bake for 35 to 45 minutes into a 175°C preheated oven, remove and leave to cool completely.
