Dried mango and macadamia sablés

Another Christmas recipe coming along. These sablés proved to be delicious, and fairly quick to make. No bothering with rolling and cutting out the dough, just form a sausage and cut disks and you’re good to go.

Dried mango and macadamia sablés

Ingredients

  • 175 g butter
  • 75 g icing sugar
  • 1 tsp vanilla sugar
  • 1 pinch of salt
  • rum
  • dried mango
  • macadamia nuts
  • 250 g flour
  • egg white

Instructions

soak the dried mango strips in some rum for at least 12 hours and chop;

beat the butter, add sugar, vanilla sugar and salt;

add the chopped mango and the flour;

form a sausage on some clean film;

brush over it with some eggwhite that has been beaten;

roll the sausage on some crushed macadamia nuts;

wrap firmly in the clean film and chill for at least 2 hours (or for the following day);

peel off the clean film and cut disks of dough;

place on a baking tray and cook in a preheated oven at 200°C for 10 minutes, leave on a rack to cool completely.
