The first tournament of 2018. It had to be cupcakes for my winners. This time with passion fruit and white chocolate. And blood orange.

Passion fruit and white chocolate cupcakes with blood orange buttercream

Ingredients

  • 50g butter
  • 250g flour
  • 190g sugar
  • 2 eggs
  • 150ml milk
  • 100g white chocolate
  • 1 passion fruit
  • salt
  • vanilla paste
  • baking powder
  • 450g icing sugar
  • 130g butter
  • zest of 2 oranges
  • juice of 1 orange
  • fondant
  • marzipan

Instructions

prepare the batter by creaming butter and sugar, add eggs, white chocolate, passion fruit and vanilla paste;

add flour, salt and baking powder (half), half of the milk, the rest of the dry ingredients and gradually the rest of the milk;

bake at 180°C in a preheated oven for 20 min;

leave to cool completely on the rack;

cream the butter for 5 minutes;

add 1 cup of icing sugar at a time, each time beat for 2 minutes;

before the last cup of icing sugar add the zest and the juice and add the remaining icing sugar;

swirl the buttercream on top and decorate with some fondant and marzipan.
