Where are all the good intentions? The New Year resolutions? Havin any of those? I don’t know. Let’s start with some salted caramel candies and chew a little while upon this.
Salted caramel candiesPrint Recipe
- 5 dl cream
- 1 pack vanilla sugar
- 500 g sugar
- 40 g butter
- maldon salt to sprinkle on top
put cream, vanilla sugar and sugar in a big pot and let it rise to a boil while stirring with a whisk. The liquid will rise a LOT;
reduce the heat so that the liquid willl still bubble and continue to stir, it will slowly thicken;
continue to stir until the cream gets thick and brownish and doesn't stick to the pot. You'll need 30-45 min to get to this stage;
take the pot away from the heat, add the butter and stir well again. Spread the mix unto an upside down cooking tray covered with parchment paper;
add a second sheet of parchment and press down the caramel to about 1cm height, take away the paper;
after about half an hour cut into 1,5 cm large squares and sprinkle with maldon salt.
these candies keep for about 2 months.
