Why did I not think of this sooner? I love cauliflower!
Cauliflower wedges with prosciuttoPrint Recipe
- parmigiano reggiano
blizz the cauliflower in the blender (and pass it through a cheesecloth if you blizz it too finely like me);
mix it with 2 eggs, some grated parmigiano reggiano, and season with salt, pepper and nutmeg;
spread it on a baking sheet and cook at 230°C for about 15 minutes;
leave to cool completely;
cut in wedges and serve with some prosciutto on top.
