Lemony cupcakes with creamcheese frosting

Ingredients

  • 190g sugar
  • 260g flour
  • 2 eggs
  • 150ml milk
  • salt
  • baking powder
  • lemon zest
  • lemon curd
  • icing sugar
  • butter
  • cream cheese
  • lemon juice
  • sprinkles

Instructions

prepare the batter for the cupcakes by mixing the dry ingredients and separately the eggs, butter and sugar;

add the dry ingredients to the wet, alternating with the milk;

bake in a preheated oven at 180°C for 15-20 min;

once cooled use a small cooke cutter to make a hole in the middle, but leave the top, to cover it up again;

add the lemon curd and cover it;

prepare the creamcheese frosting by mixing equal amounts of butter and cream cheese, add a spoon of lemon juice and gradually add the sifted icing sugar (125g butter/cream cheese, 5cups unsifted);

decorate with some sprinkles and serve.
