Unicorn cake

The expression on their faces was priceless. It totally repaid all the hours of work that went into this cake. Which, BTW, seems difficult to do, but the single steps are really not that complicated.

Serves: a shit ton! Cooking Time: all in all 5hrs


  • 3x single batch for cupcakes:
  • 190g sugar
  • 260g flour
  • 4 eggwhites
  • 150ml milk
  • salt
  • baking powder
  • vanilla extract
  • 50g butter
  • for the marshmallow fondant:
  • 450g marshmallows
  • 900g icing sugar, sifted
  • 2-4 tablespoons of water
  • 1/2 cup of vegetable fat
  • 2x single batch of buttercream
  • 250g butter
  • 850g icing sugar, unsifted
  • 1-2 tablespoons of milk
  • vanilla extract
  • food coloring
  • wooden skewer (or lollipop stick)



first I suggest you prepare the marshmallow fondant:


put the marshmallows and some of the water in a bowl and microvawe it, stirring in betweens until melted;


start adding the icing sugar, work quickly;


spread some of the vegetable fat on your working surface and pour the mixture on top, start kneeding it like you would a normal dough and add the incing sugar until it reaches the correct consistency;


prepare the ears and the horn of the unicorn;


to get true colors I used only eggwhites, so separate all the eggs;


prepare the batter for the cakes, each batter will be used for 2 18cm cake pans;


cook in a preheated oven at 180°C for 20-30 minutes, and leave to cool completely (also the cakes can be made in advance);


prepare the buttercream and start stacking the cake;


do a crumbcoating and leave in the fridge to set, then do a second layer;


use 3 different tips and color the buttercream in 4 different ways for the mane of the unicorn;


with a smaller tip form the eyes with black royal icing.
