My little princess turned 12. Is there a better way to celebrate her birthday? And this cake is SOOOO low maintenaince!

Serves: enough Cooking Time: 2x ca 10 min.

Ingredients

  • you'll need a double batch (2 layers....)
  • 4 eggyolks
  • 120g sugar
  • 1 pinch of salt
  • 2 Tbsp. warm water
  • zest of 1/2 lemon
  • 4 egg whites
  • 80g flour
  • 400g mascarpone
  • 400g cream cheese
  • 400ml whipping cream
  • 150g icing sugar
  • 1 teaspoon vanilla

Instructions

combine all the yolks, sugar, salt, lemon and warm water until the mixture becomes lighter in colour;

add the lemon zest;

beat the eggwhites until they get to a stiff peak and pour over the eggyolks;

sift the flour on top and fold very gently;

spread on a baking tray lined with parchment paper and cook for 8-10 minutes in a 220°C preheated oven;

take out and leave to cool completely;

mix the mascarpone and cream cheese;

add the cream and whip;

add the vanilla and the icing sugar;

cut out the numbers from the bisquit;

spread with lemon curd and pipe the cream on top with a round tip;

put together the two layers and decorate the top with fresh fruit, meringues, flowers, macarons
