Rainbow cheesecake - feat. little helpers

It’s sunday morning, just after brunch and my little helpers called for something to do… Let’s bake something! What?!? With this kind of heat? Are you serious? Nooo, let’s do something that doesn’t involve the oven AT ALL. Let’s do a no bake cheesecake!

Serves: at least 8


  • 300g mascarpone
  • 300g creamcheese
  • 300ml cream
  • 60-100g icing sugar
  • 125g butter
  • 1/2 pack of petit beurre bisquits
  • strawberries
  • 8 sheets of gelatine
  • mini meringues
  • food coloring



finely crush all the bisquits and mix them with the melted butter;


spread them on the bottom of a round cakepan, lined with parchment paper;


cut the strawberries and put them around the pan;


mix the mascarpone with the cream cheese and add the cream, continue to beat until firm;


take a spoonful of cream and mix it in a heated little pot with the gelatine sheets (first soaked in cold water and then squeezed);


put it back into the mixture and divide it into 6 bowls, colour it and pour it one at the time in the cakepan;


put in the fridge to set (at least 4 hours);


take out, decorate with some whipped cream, mini meringues and a strawberry.
